Abstract

The food industry, especially the dairy industry, is an integral part of human life. Milk and its derivatives occupy an important place in our daily diet. Lactose (milk sugar), an important component of milk, is the main raw material for a number of products widely used in the food industry. Lactose is one of the few sugars that occur naturally in milk, and it is characterized by its unique taste and versatile applications in the food industry. Devoted to the study of technological stages, industrial importance and economic aspects of this process. This will focus on the efficiency of lactose production, environmental impact and the role of quality control. The purpose of this work is to analyze the process of obtaining lactose, to show its modern technological approaches and its importance in the industry.
